These little delights are an irresistible combination of chewy cookie dough filled with smooth chocolate ganache, topped off with festive sprinkles or crunchy nuts.

- 1 1/4 cups all-purpose flour
- 1/3 cup unsweetened cocoa powder
- 1/2 cup unsalted butter, softened
- 2/3 cup granulated sugar
- 1 large egg yolk
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 3/4 cup chocolate chips (semi-sweet or dark)
- 3 tablespoons heavy cream
- Optional: 1/4 cup chopped nuts
- Optional: 2 tablespoons sprinkles
- Optional: 1 tablespoon powdered sugar
Instructions
- Begin by creaming together the softened butter and granulated sugar in a large mixing bowl. Using an electric mixer, beat them on medium speed for about 2 to 3 minutes until the mixture is light and fluffy.
- Add the egg yolk and vanilla extract to the creamed mixture. Continue mixing until these ingredients are seamlessly blended.
- In a separate bowl, whisk together the flour, cocoa powder, and salt. Gradually introduce the dry ingredients to the wet mixture, mixing until a soft dough forms.
- Wrap the dough in plastic wrap and chill it in the refrigerator for at least 30 minutes.
- As the dough chills, preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Scoop out and roll the dough into 1-inch balls and place them on the prepared baking sheet. Press a shallow well in the center of each ball.
- Bake in the preheated oven for about 10 to 12 minutes. Once baked, allow them to cool on a wire rack.
- To make the ganache, heat the cream until steaming. Pour it over the chocolate chips and stir until smooth.
- Fill the wells of each cookie with the ganache. Optionally, top with nuts or sprinkles.
- Allow the cookies to set before serving.
Notes
Ensure your butter is properly softened and allow the cookies to cool completely before adding ganache.
