  • Author: Alioui
  • Total Time: 2 hours 15 minutes
  • Yield: approximately 10 servings 1x

Description

This creamy and delicious appetizer is a true showstopper that will elevate any festive gathering.

Ingredients

Scale
  • 16 oz cream cheese, softened
  • 8 oz mascarpone cheese, softened
  • ½ cup grated Parmesan cheese
  • ¼ cup fresh basil, chopped
  • ¼ cup fresh parsley, chopped
  • 1 tbsp garlic powder
  • 1 tbsp Italian seasoning
  • 1 tsp crushed red pepper flakes (optional, for heat)
  • ¼ cup sun-dried tomatoes, chopped
  • ¼ cup toasted pine nuts
  • ½ cup dried cranberries (optional, for a festive touch)

Instructions

  1. Begin by combining your softened cream cheese, mascarpone cheese, and grated Parmesan in a medium mixing bowl. Using your mixer, blend these ingredients at medium speed until they achieve a velvety smooth consistency.
  2. Next, you’ll want to elevate the flavors of your cheese blend. Gradually stir in the garlic powder and Italian seasoning, mixing thoroughly. If you crave a bit of heat, add the crushed red pepper flakes.
  3. Once your cheese mixture is beautifully seasoned, fold in the chopped fresh basil, parsley, sun-dried tomatoes, toasted pine nuts, and dried cranberries (if using).
  4. Place a large sheet of plastic wrap on your countertop. Spoon the creamy cheese mixture into the center, and using the plastic wrap, shape it into a log.
  5. To help the flavors meld and the cheese log firm up, wrap it tightly in plastic wrap and refrigerate for at least two hours.
  6. When you’re ready to serve, carefully unwrap the cheese log and roll it in some additional chopped herbs, pine nuts, or cranberries.
  7. Finally, place your cheese log on a serving platter and garnish it with fresh rosemary sprigs.

Notes

Ensure your cream cheese and mascarpone are at room temperature for easier mixing and a smoother texture.
