Instructions
- Begin by combining your softened cream cheese, mascarpone cheese, and grated Parmesan in a medium mixing bowl. Using your mixer, blend these ingredients at medium speed until they achieve a velvety smooth consistency.
- Next, you’ll want to elevate the flavors of your cheese blend. Gradually stir in the garlic powder and Italian seasoning, mixing thoroughly. If you crave a bit of heat, add the crushed red pepper flakes.
- Once your cheese mixture is beautifully seasoned, fold in the chopped fresh basil, parsley, sun-dried tomatoes, toasted pine nuts, and dried cranberries (if using).
- Place a large sheet of plastic wrap on your countertop. Spoon the creamy cheese mixture into the center, and using the plastic wrap, shape it into a log.
- To help the flavors meld and the cheese log firm up, wrap it tightly in plastic wrap and refrigerate for at least two hours.
