Instructions

  1. Begin your pavlova by preheating your oven to 250°F (120°C). Lower temperatures are crucial since they allow the meringue to dry out without browning.
  2. In a clean, dry bowl, beat the room temperature egg whites on medium speed until they start to form soft peaks. Gradually add the sugar, one tablespoon at a time, continuing to beat until stiff and glossy. Fold in the vinegar, cornstarch, and vanilla.
  3. Transfer the meringue mixture onto the marked circle on your parchment-lined baking sheet. Use a spoon to create a shallow center. Bake for 1½ hours, then turn off the oven and let cool for 1 hour.
  4. While the pavlova cools, whip the heavy cream, powdered sugar, vanilla, and cinnamon until soft peaks form.
  5. Once cool, spread the whipped cream over the pavlova, then arrange the fruits on top, garnish with mint and powdered sugar.
  6. Slice and serve immediately to enjoy the delightful textures and flavors.
