Instructions
- Begin your pavlova by preheating your oven to 250°F (120°C). Lower temperatures are crucial since they allow the meringue to dry out without browning.
- In a clean, dry bowl, beat the room temperature egg whites on medium speed until they start to form soft peaks. Gradually add the sugar, one tablespoon at a time, continuing to beat until stiff and glossy. Fold in the vinegar, cornstarch, and vanilla.
- Transfer the meringue mixture onto the marked circle on your parchment-lined baking sheet. Use a spoon to create a shallow center. Bake for 1½ hours, then turn off the oven and let cool for 1 hour.
- While the pavlova cools, whip the heavy cream, powdered sugar, vanilla, and cinnamon until soft peaks form.
- Once cool, spread the whipped cream over the pavlova, then arrange the fruits on top, garnish with mint and powdered sugar.
