Description

This Churro Cheesecake blends the rich essence of cheesecake with churro flavors for a delightful dessert.


Ingredients

  • 200g graham crackers, finely crushed
  • 80g unsalted butter, melted
  • 2 tablespoons granulated sugar
  • 1 teaspoon cinnamon
  • 500g cream cheese, room temperature
  • 150g granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 100ml sour cream
  • 2 tablespoons sugar (for topping)
  • 1 teaspoon cinnamon (for topping)

Instructions

  1. Preheat your oven to 325°F (160°C). In a mixing bowl, combine graham crackers, melted butter, 2 tablespoons of sugar, and 1 teaspoon of cinnamon; mix until it resembles damp sand. Press into the bottom of a lined springform pan and bake for 8 minutes. Allow to cool.
  2. In a bowl, beat room temperature cream cheese until smooth. Add 150g of sugar and beat until fluffy. Incorporate eggs one at a time, then add vanilla extract and sour cream, mixing well.
  3. Pour the filling over the cooled crust. Mix 2 tablespoons of sugar and 1 teaspoon of cinnamon for the topping, sprinkle over. Bake for 40 minutes until edges are set and center jiggles slightly. Cool in oven with door ajar for 1 hour, then refrigerate for at least 4 hours.

Notes

Chilling overnight improves flavor. Ensure ingredients are room temperature to prevent lumps.
