- 1/3 cup unsweetened shredded coconut (optional, for coating)
Instructions
- Start by preheating your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a mixing bowl, combine the cottage cheese, egg, and vanilla extract until smooth and creamy.
- Add rolled oats, baking powder, ground cinnamon, and salt. Stir until well combined.
- Fold in the grated or finely chopped apple.
- Shape the mixture into balls approximately 1 to 1.5 inches in diameter.
- Place the shaped bites on the baking sheet and bake for 20–25 minutes.
- Let them cool for 5–10 minutes and serve warm, at room temperature, or chilled.
