- Cod Fillets: 4 pieces (about 6 oz each)
- All-Purpose Flour: 1 ½ cups
- Cornstarch: ¼ cup
- Baking Powder: 1 teaspoon
- Sparkling Water: 1 ¼ cups, chilled
- Salt: 1 teaspoon
- White Pepper: ½ teaspoon
- Large Russet Potatoes: 4, peeled and cut into thick chips
- Oil for Frying: About 2 liters (vegetable or canola oil)
- Optional: Malt vinegar, tartar sauce, lemon wedges
Instructions
- Start by heating the oil in a deep fryer or heavy-bottomed pot to approximately 350°F.
- In a large mixing bowl, whisk together the all-purpose flour, cornstarch, baking powder, salt, and white pepper. Slowly whisk in the chilled sparkling water. Let the batter rest for about 10 minutes.
- Peel and cut the large russet potatoes into thick chips. Rinse the cut potatoes and dry them thoroughly. Fry the chips in the hot oil for approximately 4-5 minutes until just soft.
- Dredge each cod fillet lightly in flour, then dip into the batter.
- Carefully drop the coated fish into the hot oil and fry for about 5-7 minutes until golden brown.
- Return the potatoes to the hot oil for an additional 2-3 minutes until they achieve a crispy finish.
Notes
Fried fish is best served fresh; consider preparing the batter and chips ahead of time. Make sure to double fry the chips for the perfect crispiness.
