  • Sparkling Water: 1 ¼ cups, chilled
  • Salt: 1 teaspoon
  • White Pepper: ½ teaspoon
  • Large Russet Potatoes: 4, peeled and cut into thick chips
  • Oil for Frying: About 2 liters (vegetable or canola oil)
  • Optional: Malt vinegar, tartar sauce, lemon wedges

Instructions

  1. Start by heating the oil in a deep fryer or heavy-bottomed pot to approximately 350°F.
  2. In a large mixing bowl, whisk together the all-purpose flour, cornstarch, baking powder, salt, and white pepper. Slowly whisk in the chilled sparkling water. Let the batter rest for about 10 minutes.
  3. Peel and cut the large russet potatoes into thick chips. Rinse the cut potatoes and dry them thoroughly. Fry the chips in the hot oil for approximately 4-5 minutes until just soft.
  4. Dredge each cod fillet lightly in flour, then dip into the batter.
  5. Carefully drop the coated fish into the hot oil and fry for about 5-7 minutes until golden brown.
  6. Return the potatoes to the hot oil for an additional 2-3 minutes until they achieve a crispy finish.
