Instructions

  1. Start by preparing the rice noodles according to the package instructions. Since cooking times may vary depending on the brand, it’s essential to keep an eye on them to avoid overcooking. Once cooked, drain the noodles and set them aside. It’s best to coat them lightly with a splash of oil to prevent sticking until you are ready to serve.
  2. In a large skillet over medium heat, melt the coconut oil. Add the finely chopped onion and sauté for 2-3 minutes until it becomes translucent. Then, introduce the minced garlic and ginger to the mixture, allowing their fragrant aromas to infuse the oil. Stir in the red curry paste and let it cook for an additional minute.
