Instructions
- Start by heating a tablespoon of coconut oil in a large skillet over medium heat. Once the oil glistens, add the diced onion and cook for about 4–5 minutes until they become translucent and fragrant. Next, incorporate the minced ginger, garlic, and red chili, stirring continuously. Allow this aromatic blend to cook for another 2 minutes.
- Pour in the coconut milk cans, ensuring a creamy base for the chicken. Add the red curry paste, soy sauce, brown sugar, salt, and pepper to the skillet. Stir all the ingredients together thoroughly to form a unified and flavorful sauce.
- Introduce the thinly sliced chicken breast into the mix, reducing the heat to low. Allow the chicken to simmer gently in the sauce for 15–20 minutes.
