- Start off by sprinkling the powdered gelatin evenly over three tablespoons of cold water in a small bowl. This process, often referred to as blooming, takes about 5 to 10 minutes. It allows the gelatin to absorb the water and soften, which is crucial for achieving the perfect texture in your panna cotta.
- In a medium saucepan, combine the full-fat coconut milk and sugar over medium heat. Stir occasionally until the sugar is completely dissolved, but be careful not to let it boil. The goal is to infuse the coconut milk with sweetness while retaining its creamy goodness.
- Once the sugar dissolves, remove the saucepan from heat. Add in the bloomed gelatin and vanilla extract, whisking vigorously until the gelatin fully dissolves into the mixture. This step is key to achieving a smooth panna cotta, so make sure there are no lumps left.
