Instructions

  1. Begin by preheating your oven to 350°F (175°C). This ensures that your muffins bake evenly and achieve that perfect golden color. While the oven heats up, take a moment to line your muffin tin with paper liners.
  2. In a small bowl, prepare the streusel topping by combining 1/4 cup of flour, 2 tablespoons of granulated sugar, 1/4 teaspoon of cinnamon, and 2 tablespoons of melted butter. Use your fingers or a fork to mix until the mixture resembles coarse crumbs. Set this aside.
  3. In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, brown sugar, baking powder, baking soda, salt, and pumpkin pie spice.
  4. In a separate bowl, whisk together the pumpkin puree, eggs, vegetable oil, buttermilk, and vanilla extract until the mixture is smooth and well-combined.
