  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Fresh herbs for garnish (optional)
  • Sliced tomatoes or avocado for garnish (optional)

Instructions

  1. Begin by preheating your oven to 350°F (175°C). Prepare your baking dish by greasing it well to prevent sticking.
  2. In a large mixing bowl, crack all six large eggs and whisk them together until they’re light and fluffy.
  3. Stir in the cottage cheese, ensuring it is well combined with the eggs.
  4. Fold in the chopped spinach, diced bell pepper, chopped onion, garlic powder, onion powder, salt, and black pepper.
  5. Now, fold in the shredded cheddar cheese, reserving some cheese to sprinkle on top before baking.
  6. Pour the entire mixture into your prepared baking dish and sprinkle the reserved cheddar cheese on top. Bake for 40-45 minutes.
