The Cottage Cheese Egg Bake is a nutritious and light meal option that combines eggs, cottage cheese, and vibrant vegetables, perfect for breakfast or brunch.
Ingredients
Scale
- 6 large eggs
- 2 cups cottage cheese (full-fat for creaminess)
- 1 cup shredded cheddar cheese
- 1 cup chopped spinach
- 1/2 cup diced bell pepper
- 1/2 cup chopped onion
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Fresh herbs for garnish (optional)
- Sliced tomatoes or avocado for garnish (optional)
Instructions
- Begin by preheating your oven to 350°F (175°C). Prepare your baking dish by greasing it well to prevent sticking.
- In a large mixing bowl, crack all six large eggs and whisk them together until they’re light and fluffy.
- Stir in the cottage cheese, ensuring it is well combined with the eggs.
- Fold in the chopped spinach, diced bell pepper, chopped onion, garlic powder, onion powder, salt, and black pepper.
- Now, fold in the shredded cheddar cheese, reserving some cheese to sprinkle on top before baking.
- Pour the entire mixture into your prepared baking dish and sprinkle the reserved cheddar cheese on top. Bake for 40-45 minutes.
Notes
You can add cooked sausage, bacon, or even shredded chicken for extra protein. This recipe is also freezer-friendly: simply store slices in an airtight container and reheat them as needed.
