  • 4 small zucchini, halved lengthwise and seeded
  • 1 cup cottage cheese
  • ¼ cup grated parmesan cheese
  • 1 tsp Italian seasoning
  • 1 garlic clove, minced
  • 1 tbsp olive oil
  • Salt & pepper, to taste
  • Optional: chopped cherry tomatoes or diced red bell pepper
  • Optional: fresh parsley for garnish

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper. Halve the zucchinis lengthwise and scoop out their centers.
  2. In a mixing bowl, combine cottage cheese, parmesan, Italian seasoning, and minced garlic. Mix until well combined.
  3. Spoon the filling into the hollowed zucchinis and add any optional toppings. Bake for 20-25 minutes.
  4. If desired, broil for 2-3 minutes for a crisped top.
  5. Let sit for 5 minutes, garnish as desired, and serve warm.
