- 4 small zucchini, halved lengthwise and seeded
- 1 cup cottage cheese
- ¼ cup grated parmesan cheese
- 1 tsp Italian seasoning
- 1 garlic clove, minced
- 1 tbsp olive oil
- Salt & pepper, to taste
- Optional: chopped cherry tomatoes or diced red bell pepper
- Optional: fresh parsley for garnish
Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper. Halve the zucchinis lengthwise and scoop out their centers.
- In a mixing bowl, combine cottage cheese, parmesan, Italian seasoning, and minced garlic. Mix until well combined.
- Spoon the filling into the hollowed zucchinis and add any optional toppings. Bake for 20-25 minutes.
- If desired, broil for 2-3 minutes for a crisped top.
- Let sit for 5 minutes, garnish as desired, and serve warm.
