These Cottage Cheese Tuna Cakes are packed with protein and are perfect for a quick meal.

- 1 can (5 oz) tuna in water, well drained
- ½ cup small-curd cottage cheese
- 1 large egg
- ½ cup panko breadcrumbs
- ¼ cup chopped green onions
- 1 tbsp chopped parsley (optional)
- ¼ tsp garlic powder
- ¼ tsp black pepper
- Pinch of salt
- 1 tbsp olive oil (for pan-frying)
Instructions
- Start by breaking up the drained tuna in a large bowl. Combine it with the small-curd cottage cheese. Stir it gently to blend without mashing the tuna too much.
- Next, crack the large egg into your mixture, followed by the green onions, optional parsley, garlic powder, salt, and black pepper. Stir everything thoroughly until well combined.
- Now, it’s time to fold in the panko breadcrumbs. Gently mix the breadcrumbs into your mixture until it holds together.
- Using your hands, evenly divide the mixture into six portions and shape them into patties that are about 2½ inches wide.
- Next, heat the olive oil in a skillet over medium heat. Once the oil is hot, gently lay your patties in the skillet. Allow them to cook for about 3–4 minutes on each side or until they turn golden brown.
- Once cooked, remove the patties and place them on paper towels to drain any excess oil. Serve them warm, accompanied by lemon wedges and your favorite dipping sauce.
Notes
For a healthier option, bake the patties in the oven at 375°F for 15 minutes, flipping halfway through.
