Ingredients

  • 20 medium white or cremini mushrooms
  • 1 tablespoon olive oil
  • 8 oz lump crab meat
  • 4 oz cream cheese
  • 1/4 cup mayonnaise
  • 1/4 cup Parmesan cheese
  • 2 tablespoons green onions, chopped
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon lemon zest
  • 1 teaspoon lemon juice
  • 1 clove garlic, minced
  • 1/4 teaspoon smoked paprika
  • Salt and pepper to taste
  • 2 tablespoons panko breadcrumbs (optional)
  • 1 tablespoon melted butter (optional)

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare the mushrooms by cleaning and hollowing them.
  2. Combine cream cheese, mayonnaise, and Parmesan cheese in a bowl. Gently fold in the other filling ingredients.
  3. Scoop the filling into the prepared mushroom caps and add buttery panko if desired.
  4. Bake for 20-25 minutes until golden brown. Cool briefly and serve warm.

Notes

Make-ahead stuffing can be refrigerated; store leftovers in an airtight container for up to three days.
