- 20 medium white or cremini mushrooms
- 1 tablespoon olive oil
- 8 oz lump crab meat
- 4 oz cream cheese
- 1/4 cup mayonnaise
- 1/4 cup Parmesan cheese
- 2 tablespoons green onions, chopped
- 1 tablespoon fresh parsley, chopped
- 1 teaspoon lemon zest
- 1 teaspoon lemon juice
- 1 clove garlic, minced
- 1/4 teaspoon smoked paprika
- Salt and pepper to taste
- 2 tablespoons panko breadcrumbs (optional)
- 1 tablespoon melted butter (optional)
Instructions
- Preheat your oven to 375°F (190°C) and prepare the mushrooms by cleaning and hollowing them.
- Combine cream cheese, mayonnaise, and Parmesan cheese in a bowl. Gently fold in the other filling ingredients.
- Scoop the filling into the prepared mushroom caps and add buttery panko if desired.
- Bake for 20-25 minutes until golden brown. Cool briefly and serve warm.

Make-ahead stuffing can be refrigerated; store leftovers in an airtight container for up to three days.
