Description

Cranberry Orange Chicken is a culinary delight that seamlessly blends the tartness of fresh cranberries with the bright, zesty flavor of oranges.

Ingredients

Scale
  • 4 chicken breasts or thighs, boneless and skinless
  • 1 cup fresh cranberries
  • 1 large orange, zested and juiced
  • 2 tablespoons honey or maple syrup
  • 1 tablespoon olive oil
  • 2 garlic cloves, finely chopped
  • 1 teaspoon fresh thyme or rosemary (or 1/2 teaspoon dried)
  • Salt and black pepper to taste
  • 1/2 cup chicken broth or water
  • 1 tablespoon balsamic vinegar (optional)
  • 1 teaspoon Dijon mustard (optional)

Instructions

  1. Begin by seasoning your chicken generously with salt, black pepper, and your choice of fresh thyme or rosemary. Allow the chicken to rest while you prepare the other ingredients.
  2. Heat the olive oil in a large skillet over medium-high heat. Once the oil is hot, add the seasoned chicken. Cook for approximately 4-6 minutes on each side, allowing the chicken to develop a beautiful golden-brown crust.
  3. In the same skillet, add the finely chopped garlic and sauté it until fragrant, about 30 seconds. Then, add the fresh cranberries, orange juice, orange zest, and honey. Stir the mixture well and allow it to simmer for about 5-7 minutes, or until the cranberries start to burst and soften.
  4. Return the chicken to the skillet, ensuring it is well coated with the sauce. Pour in the chicken broth (or water) and use a wooden spoon to scrape up any delicious bits stuck to the bottom of the pan. Cover the skillet and let it simmer for 10-12 minutes, or until the chicken reaches an internal temperature of 165°F.
