Ingredients

  • 2 cups fruit of choice
  • 1/4 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup milk
  • 1/2 teaspoon vanilla extract
  • 1/2 cup unsalted butter, melted
  • 1 tablespoon coarse sugar (optional)
  • Whipped cream or vanilla ice cream (for serving)

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a 9-inch pie dish.
  2. Spread 2 cups of your favorite fruit in the bottom of the pie dish, toss with cornstarch and granulated sugar.
  3. In a bowl, mix flour, sugar, baking powder, and salt, then whisk in milk and vanilla, and finally stir in melted butter.
  4. Pour the batter over the fruit in the pie dish and sprinkle with coarse sugar if desired.
  5. Bake for 45–50 minutes until golden brown, then cool for 15–20 minutes before serving.
