- 2 cups fruit of choice
- 1/4 cup granulated sugar
- 1 tablespoon cornstarch
- 1 cup all-purpose flour
- 1 cup granulated sugar
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup milk
- 1/2 teaspoon vanilla extract
- 1/2 cup unsalted butter, melted
- 1 tablespoon coarse sugar (optional)
- Whipped cream or vanilla ice cream (for serving)
Instructions
- Preheat your oven to 375°F (190°C) and grease a 9-inch pie dish.
- Spread 2 cups of your favorite fruit in the bottom of the pie dish, toss with cornstarch and granulated sugar.
- In a bowl, mix flour, sugar, baking powder, and salt, then whisk in milk and vanilla, and finally stir in melted butter.
- Pour the batter over the fruit in the pie dish and sprinkle with coarse sugar if desired.
- Bake for 45–50 minutes until golden brown, then cool for 15–20 minutes before serving.
