- 2 chicken breasts, sliced in half horizontally
- 1/2 cup all-purpose flour
- 1 large egg, beaten
- 1 cup breadcrumbs
- 2 tablespoons olive oil
- 2 tablespoons butter
- 1/2 cup chicken broth
- 1/2 cup heavy cream
- Juice of 2 fresh lemons
- 2 tablespoons capers, drained
- Salt and pepper to taste
Instructions
- Prepare the chicken by butterflying the breasts and seasoning with salt and pepper.
- Cook the chicken in a skillet with olive oil and butter until golden brown.
- Make the sauce in the same skillet using chicken broth, lemon juice, cream, and capers.
- Combine the chicken with the sauce and serve.
