Description

Ingredients

  • 2 chicken breasts, sliced in half horizontally
  • 1/2 cup all-purpose flour
  • 1 large egg, beaten
  • 1 cup breadcrumbs
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • Juice of 2 fresh lemons
  • 2 tablespoons capers, drained
  • Salt and pepper to taste

Instructions

  1. Prepare the chicken by butterflying the breasts and seasoning with salt and pepper.
  2. Cook the chicken in a skillet with olive oil and butter until golden brown.
  3. Make the sauce in the same skillet using chicken broth, lemon juice, cream, and capers.
  4. Combine the chicken with the sauce and serve.
