  • 10 oz can Rotel (diced tomatoes with green chilies)
  • 10.5 oz can cream of chicken soup
  • 10.5 oz can cream of mushroom soup
  • 0.5 cup chicken broth
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon onion powder
  • 0.5 teaspoon paprika (optional)
  • Salt and black pepper to taste
  • 8 oz cream cheese, cubed
  • 2 cups shredded cheddar cheese (divided)
  • 12 oz spaghetti, cooked al dente
  • 1 tablespoon olive oil or butter
  • Fresh chopped parsley for garnish (optional)

Instructions

  1. Begin by placing the chicken breasts in the bottom of your crockpot. Generously season them with salt, black pepper, garlic powder, onion powder, and if you like a little kick, sprinkle in the paprika.
  2. Next, gently layer the Rotel, cream of chicken soup, cream of mushroom soup, and chicken broth over the seasoned chicken.
  3. Cover and set your crockpot to cook on low for about 6 hours or on high for 3-4 hours.
  4. After the cooking time is up, remove the chicken from the pot. With two forks, shred the chicken into bite-sized pieces.
  5. Now, add the cubed cream cheese and 1.5 cups of shredded cheddar cheese to the crockpot. Stir the mixture and allow it to cook for an additional 15–20 minutes or until the cheese is melted and combined.
  6. While the sauce is coming together, bring a pot of salted water to a boil and cook your spaghetti until al dente.
  7. Add the cooked spaghetti to the creamy chicken mixture in the crockpot. Stir until every strand of spaghetti is well-coated with that delicious sauce.
  8. The final touch is to sprinkle the remaining cheddar cheese over the top. Cover the crockpot once more and let it sit for about 5-10 minutes to allow the cheese to melt completely.
