- ½ pound medium pasta shells (about 3 cups)
- ¾ cup sliced pickles
- ⅔ cup diced cheddar cheese
- 3 tablespoons minced white onion
- 2 tablespoons chopped fresh dill
- ½ cup dill pickle juice (for soaking pasta)
Instructions
- Start by bringing a large pot of salted water to a boil. Add the medium pasta shells and cook according to package directions until they reach al dente, about 8-10 minutes. Once cooked, drain the pasta in a colander and immediately rinse it under cold water to stop the cooking process.
- After rinsing, toss the pasta with ½ cup of dill pickle juice in a large mixing bowl. Let it sit for about five minutes; this allows the pasta to absorb the tangy flavors of the pickle juice. After five minutes, drain any excess liquid from the pasta.
- In a separate bowl, whisk together the mayonnaise, sour cream, 4 tablespoons of dill pickle juice, cayenne pepper, and a pinch of salt and black pepper.
- In the large bowl containing the pasta, add in the sliced pickles, diced cheddar cheese, minced onion, and fresh dill. Pour the dressing over the top and carefully stir everything together until the pasta and other ingredients are evenly coated with the dressing.
Notes
Make sure to use freshly squeezed dill pickle juice for the best flavor. This salad holds up well for a few days in the fridge, so it’s great for leftovers.
