- 12 oz rigatoni (or fusilli)
- 1 lb sirloin or ribeye steak, cubed
- 2 tbsp olive oil
- 3 tbsp butter
- 4 garlic cloves, minced
- 1 cup heavy cream
- 3/4 cup freshly grated Parmesan cheese
- Salt to taste
- Black pepper to taste
- 2 tbsp chopped fresh parsley
Instructions
- Begin by meticulously dicing the steak into bite-sized cubes. Set aside while you bring a large pot of salted water to a rolling boil.
- Once boiling, add the rigatoni and cook according to package instructions until al dente (8–10 minutes). Drain, reserving 1/2 cup pasta water.
- Heat olive oil in a large skillet over medium-high heat. Sear the steak in batches for 3–4 minutes until golden brown. Remove and let rest.
- Lower heat, add butter to the skillet. Once melted, sauté minced garlic for 1 minute. Pour in heavy cream, bringing to a simmer, then add grated Parmesan cheese, stirring until melted. If too thick, add reserved pasta water to reach desired consistency.
- Add cooked pasta and seared steak back to skillet, stirring to combine and heat through for 1–2 minutes.
- Serve immediately with chopped parsley on top for garnish.
Notes
Using freshly grated Parmesan cheese ensures a smoother sauce; avoid pre-grated cheeses for the best texture.
