  • 1 lb sirloin or ribeye steak, cubed
  • 2 tbsp olive oil
  • 3 tbsp butter
  • 4 garlic cloves, minced
  • 1 cup heavy cream
  • 3/4 cup freshly grated Parmesan cheese
  • Salt to taste
  • Black pepper to taste
  • 2 tbsp chopped fresh parsley

Instructions

  1. Begin by meticulously dicing the steak into bite-sized cubes. Set aside while you bring a large pot of salted water to a rolling boil.
  2. Once boiling, add the rigatoni and cook according to package instructions until al dente (8–10 minutes). Drain, reserving 1/2 cup pasta water.
  3. Heat olive oil in a large skillet over medium-high heat. Sear the steak in batches for 3–4 minutes until golden brown. Remove and let rest.
  4. Lower heat, add butter to the skillet. Once melted, sauté minced garlic for 1 minute. Pour in heavy cream, bringing to a simmer, then add grated Parmesan cheese, stirring until melted. If too thick, add reserved pasta water to reach desired consistency.
  5. Add cooked pasta and seared steak back to skillet, stirring to combine and heat through for 1–2 minutes.
  6. Serve immediately with chopped parsley on top for garnish.

Notes

Using freshly grated Parmesan cheese ensures a smoother sauce; avoid pre-grated cheeses for the best texture.
