- 2 cups cooked chicken breast, shredded
- 120 grams red bell pepper, diced
- 80 grams red onion, finely chopped
- 15 grams fresh cilantro, chopped
- 200 grams shredded Mexican blend cheese (cheddar, Monterey Jack, or similar)
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 4 large flour tortillas (25 cm diameter)
- 2 tablespoons unsalted butter or neutral oil
Instructions
- Start by gathering your ingredients and placing them in a large mixing bowl. Combine the shredded chicken, diced red bell pepper, finely chopped red onion, and fresh cilantro. Sprinkle in the ground cumin, chili powder, garlic powder, salt, and black pepper, then mix thoroughly.
- Take one tortilla and spread approximately 50 grams of cheese over half. Spoon one-quarter of the chicken mixture on top, followed by another sprinkle of cheese. Fold the tortilla in half and seal the filling inside. Repeat with remaining tortillas.
- In a nonstick skillet, heat butter or oil over medium heat. Cook each quesadilla for 2-3 minutes per side until golden brown and crispy. Let rest before slicing into wedges.
