Instructions

  1. Begin by preheating your oven to 425°F (220°C). Wash and peel the russet potatoes thoroughly to remove any dirt and impurities. Using a sharp knife or mandoline slicer, carefully slice the potatoes into very thin, shoestring-sized strips.
  2. Place the thinly sliced potatoes into a large bowl filled with water. Allow them to soak for 10-15 minutes. After soaking, drain the water and pat the slices dry with paper towels.
  3. Once the potatoes are dry, transfer them into a mixing bowl. Add in the olive oil, garlic powder, paprika, salt, and pepper. Toss everything together until the potato slices are evenly coated.
  4. Spread the seasoned potato slices in a single layer on a baking sheet lined with parchment paper. Bake for 20-25 minutes. Halfway through baking, use tongs to flip the fries.
  5. Once baked to crispy perfection, remove the fries from the oven. Sprinkle with freshly chopped parsley if desired and serve immediately.
