- In your large mixing bowl, combine the softened butter and powdered sugar. Use an electric mixer to cream them together until smooth and creamy. Once the base is ready, carefully fold in the aromatic orange zest and the vanilla extract, infusing the dough with zestful, aromatic flavors.
- Slowly add in the flour and salt, incorporating them into the mixture until a soft dough forms. Handle the dough gently to maintain its tender texture. Roll the dough into the shape of a log, approximately 2 inches in diameter. Securely wrap the log in plastic wrap and refrigerate for a minimum of 1 hour to firm it up, which helps with easier and cleaner slicing.
- Preheat your oven to 325°F (165°C) and line a baking sheet with parchment paper to prevent sticking. Take the chilled dough from the refrigerator and slice it into 1/4-inch rounds. Arrange the slices on the prepared baking sheet, keeping adequate space between them to allow for spreading. Bake them in the preheated oven for 12–15 minutes, looking for edges turning a gentle golden color. Remove them and let them cool completely before proceeding to the next step.
- While the cookies are cooling, melt the dark chocolate with a teaspoon of vegetable oil in a microwave or using a double boiler, stirring until smooth and glossy. Take the cooled cookies and dip them halfway into the chocolate, giving them a luscious coating. Lay them on parchment paper to set. Allow the chocolate to harden completely before serving or storing the cookies.
