- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 jalapeño or serrano pepper, seeded and chopped (optional for heat)
- 1 (14 oz) can of diced tomatoes
- 1/2 teaspoon ground cumin
- Salt and pepper, to taste
- ¼ cup of crumbled queso fresco or shredded cheese per serving
- Optional toppings: avocado slices, fresh cilantro, hot sauce
- 4 corn tortillas
- 4 large eggs
- 1 cup refried beans (canned or homemade)
- Olive oil, for frying
Instructions
- Create the Ranchero Sauce by sautéing onion and garlic, adding diced tomatoes and cumin, and simmering.
- Crisp the tortillas by frying them in oil until golden.
- Cook the eggs sunny-side up in the same skillet.
- Assemble by spreading refried beans on tortillas, adding eggs, and topping with ranchero sauce and toppings.
Notes
The sauce can be made ahead of time and reheated; store leftovers in a sealed container.
