Ingredients

  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 jalapeño or serrano pepper, seeded and chopped (optional for heat)
  • 1 (14 oz) can of diced tomatoes
  • 1/2 teaspoon ground cumin
  • Salt and pepper, to taste
  • ¼ cup of crumbled queso fresco or shredded cheese per serving
  • Optional toppings: avocado slices, fresh cilantro, hot sauce
  • 4 corn tortillas
  • 4 large eggs
  • 1 cup refried beans (canned or homemade)
  • Olive oil, for frying

Instructions

  1. Create the Ranchero Sauce by sautéing onion and garlic, adding diced tomatoes and cumin, and simmering.
  2. Crisp the tortillas by frying them in oil until golden.
  3. Cook the eggs sunny-side up in the same skillet.
  4. Assemble by spreading refried beans on tortillas, adding eggs, and topping with ranchero sauce and toppings.

Notes

The sauce can be made ahead of time and reheated; store leftovers in a sealed container.
