- 1 ½ cups graham cracker crumbs
- 2 tablespoons brown sugar

- 16 oz cream cheese, softened to room temperature
- ¾ cup granulated sugar
- 2 tablespoons all-purpose flour
- ½ cup full-fat eggnog
- 1 teaspoon pure vanilla extract
- ½ teaspoon ground nutmeg
- 2 large eggs, room temperature
Instructions
- Begin by preheating your oven to 325°F (163°C). While the oven heats up, take your 9×9-inch baking pan and line it with parchment paper, leaving some overhang on the sides.
- In a medium-sized mixing bowl, combine the graham cracker crumbs with brown sugar, ground cinnamon, and ground nutmeg. Pour in the melted butter and mix until all the crumbs are evenly coated. Press this mixture firmly into the bottom of your prepared pan. Bake for 8-10 minutes until lightly golden.
- Once your crust is done baking and has cooled slightly, in a separate large mixing bowl, beat the softened cream cheese on medium speed until it’s smooth. Gradually add in the granulated sugar and flour, mixing until fully incorporated.
- Add the eggnog, vanilla extract, and a generous ½ teaspoon of ground nutmeg to the cream cheese mixture. Mix on low speed until everything is combined and smooth.
- Add the eggs, one at a time, mixing gently after each addition.
- Pour the creamy filling over the cooled graham cracker crust, smoothing the top. Bake in the preheated oven for 35-40 minutes, or until the center is set but still slightly jiggly. After baking, let the cheesecake bars cool for 1 hour at room temperature before transferring them to the refrigerator.
- For the best texture, cover and chill your cheesecake bars for at least 4 hours, or overnight for optimal results.

Ensure your cream cheese is at room temperature before mixing for a smooth filling. Chilling overnight leads to a firmer texture which is easier to slice. Use a heated knife to slice the bars for clean, sharp edges.
