Ingredients
Scale
- 2 1/4 cups all-purpose flour (or a gluten-free 1:1 blend)
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 teaspoon ground nutmeg
- 3/4 teaspoon ground cinnamon
- 1/4 teaspoon kosher salt
- 3/4 cup granulated sugar
- 1/4 cup light brown sugar (packed)
- 3/4 cup unsalted butter (softened)
- 1 large egg
- 1 1/2 teaspoons vanilla extract
- 1/2 cup full-fat eggnog
- For the glaze:
- 1 cup powdered sugar
- 2–3 tablespoons eggnog
- Optional Additions: Sprinkle of nutmeg or a touch of rum extract
Instructions
- Start by preheating your oven to 350°F (175°C). As the temperature rises, take a moment to line your baking sheets with parchment paper or silicone mats.
- In a sizable mixing bowl, whisk together the flour, baking soda, baking powder, nutmeg, cinnamon, and salt.
- In another bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Add the egg and vanilla extract.
- Slowly pour the eggnog into the mixture, stirring gently. Gradually add the dry ingredients until a smooth dough forms.
- Use a medium cookie scoop to create balls of dough, place them on the baking sheets, and flatten each ball slightly.
- Bake for 9-11 minutes until the tops are set and the edges are light golden brown. Cool for 2-3 minutes before transferring to a wire rack.
- Prepare the glaze by whisking together the powdered sugar and eggnog until smooth, then drizzle over the cooled cookies.
Notes
Allow the cookies to cool completely before glazing. Store any leftovers in an airtight container.
