Description
This Eggs Benedict Casserole not only simplifies a beloved brunch dish but also elevates it with a unique casserole twist.
Ingredients
Scale
- 12 large eggs
- 1 tsp onion powder
- 1 cup diced cooked ham or Canadian bacon
- 1 tsp garlic powder
- 1 cup shredded Swiss cheese
- 1 tsp Dijon mustard
- 1 package (12 oz) English muffins, split, toasted & cubed
- 2 cups milk
- Salt and black pepper, to taste
- ¼ cup chopped chives (for garnish)
- For the Hollandaise Sauce:
- 1 cup unsalted butter
- 3 large egg yolks
- 1 tbsp lemon juice
- Pinch of salt and cayenne pepper
Instructions
- Start by preheating your oven to 350°F (175°C) and greasing a 9×13-inch casserole dish. In a large mixing bowl, whisk together the eggs, milk, Dijon mustard, garlic powder, onion powder, salt, and black pepper until fully combined.
- Add the diced ham or Canadian bacon and shredded Swiss cheese into the bowl with the egg mixture. Stir thoroughly to ensure the ham and cheese are evenly distributed. Spread the cubed and toasted English muffins evenly into the greased casserole dish. Pour the egg mixture over the muffins, gently pressing down with a spatula to ensure everything is well-soaked and leveled.
- Cover your casserole dish with aluminum foil and place it in the preheated oven. Allow it to bake for 30 minutes. After this initial baking time, remove the foil and return the dish to the oven. Continue to bake uncovered for an additional 15 to 20 minutes, or until the eggs are set and the top turns a delicious golden brown.
- While the casserole finishes baking, prepare the hollandaise sauce. In a double boiler or a heatproof bowl over simmering water, whisk together the egg yolks and lemon juice. Keep whisking until the mixture thickens slightly. Gradually add the melted butter while whisking continuously. Season the sauce with a pinch of salt and cayenne pepper for a subtle kick.
- Once baked, let the casserole cool slightly to set further. Slice into portions, drizzle generously with the warm hollandaise sauce, and sprinkle with chopped chives for garnish. Serve immediately and enjoy the comforting harmony of this dish!
