- 2 cups diced sweet potatoes (about 8 oz)
- 6 cups mixed greens, roughly chopped (180 g)
- 1 ½ cups shredded cooked chicken (about 6 oz)
- 1 cup diced apple (about 100 g)
- 2 tablespoons roasted pumpkin seeds
- 2 tablespoons dried cranberries
- ⅓ cup crumbled goat cheese (about 1.5 oz)
- ¼ cup orange vinaigrette dressing
- ½ tablespoon olive oil (for roasting)
- Salt and black pepper, to taste
Instructions
- Preheat your oven to 400°F (200°C). Toss diced sweet potatoes with olive oil, salt, and pepper. Spread onto a baking sheet and roast for 25-35 minutes.
- Chop mixed greens and dice the apple. Combine in a bowl with the roasted sweet potatoes once cooked.
- Add shredded chicken, dried cranberries, and pumpkin seeds. Top with crumbled goat cheese and season with salt and pepper.
- Drizzle with orange vinaigrette and toss gently to combine.
Notes
For extra crunch, toast the pumpkin seeds. Allow sweet potatoes to cool slightly before mixing to avoid wilting the greens.
