- 16 oz cream cheese, softened
- 8 oz mascarpone cheese, softened
- ½ cup grated Parmesan cheese
- ¼ cup fresh basil, chopped
- ¼ cup fresh parsley, chopped
- 1 tbsp garlic powder
- 1 tbsp Italian seasoning
- 1 tsp crushed red pepper flakes (optional)
- ¼ cup sun-dried tomatoes, chopped
- ¼ cup toasted pine nuts
- ½ cup dried cranberries (optional, for color)
Instructions
- Start by placing the softened cream cheese, mascarpone cheese, and grated Parmesan cheese into a large mixing bowl. Using a sturdy spatula or a hand mixer, blend the cheeses together until they achieve a smooth consistency.
- Next, sprinkle in the chopped fresh basil and parsley. Follow this with garlic powder and Italian seasoning. If you’re a fan of spicy heat, you can add the crushed red pepper flakes! Mix everything thoroughly until evenly distributed.
- Gently fold in the chopped sun-dried tomatoes, toasted pine nuts, and dried cranberries if using. Ensure everything is well combined.
- Lay out a large sheet of plastic wrap and transfer the cheese mixture onto it, forming a log shape. Wrap tightly and chill for a minimum of two hours.
- Unwrap and roll in additional herbs or nuts if desired. Garnish with rosemary sprigs and serve alongside crackers, crostini, or fresh veggies.
