  • 1 cup mixed berries (strawberries, raspberries, blueberries)
  • ¼ cup pomegranate seeds
  • Fresh mint leaves (for garnish)

Instructions

  1. Begin by beating the egg whites in a clean mixing bowl. It’s crucial they are at room temperature, as this helps in achieving the maximum volume. Use a stand mixer or a hand mixer on medium speed until the egg whites form soft peaks.
  2. Once you’ve achieved soft peaks, gradually add the granulated sugar, one tablespoon at a time.
  3. With your egg white mixture ready, gently fold in the white vinegar, vanilla extract, and cornstarch.
  4. Using a spoon or spatula, carefully scoop the meringue mixture onto the baking tray, following the traced circle you made earlier.
  5. Slide your baking tray into the preheated oven and bake for one hour.
  6. Once your pavlova is completely cool, it’s time to whip up the topping.
  7. Spoon the prepared whipped cream generously over the cooled pavlova, spreading it into the center.
