Description
These delightful cookies embody a perfect blend of salty and sweet, combining creamy peanut butter, crunchy Ritz crackers, and a luscious chocolate coating.
Ingredients
Scale
- 24 mini Reese’s peanut butter cups, unwrapped
- 48 Ritz crackers (24 pairs)
- 12 oz semi-sweet or milk chocolate chips (or melting wafers)
- 1 tablespoon coconut oil or vegetable shortening (optional)
- Holiday sprinkles or flaky sea salt, for garnish
Instructions
- Start your cookie-making journey by laying 24 Ritz crackers flat side up on a tray. This will be your base for each delicious sandwich. Take one mini Reese’s cup and place it on top of each cracker, followed by another cracker to create a delightful sandwich. Press gently to secure everything in place, ensuring that the Reese’s are snugly nestled between the Ritz crackers.
- Next, it’s time to melt your chocolate. Place the chocolate chips and, if using, the coconut oil in a microwave-safe bowl. Microwave in 20–30 second intervals, stirring regularly. This step is crucial to achieving a smoothly melted chocolate; avoid overheating as it can seize up the chocolate. Once melted, your chocolate should be perfectly glossy and ready for dipping.
- Grab a fork or your dipping tool to dip each Ritz sandwich into the melted chocolate. Ensure each sandwich is fully coated, then lift it out of the chocolate and tap off any excess. As you place the dipped cookies on a parchment-lined baking sheet, be sure to add your holiday sprinkles or a sprinkle of flaky sea salt while the chocolate is still wet to ensure adhesion.
- Once you’ve dunked all the sandwiches, allow them to sit at room temperature until the chocolate firms up, or place them in the fridge for 15–20 minutes to speed up the process. Once set, these cookies will be ready to devour or share!
