Description

Fluffy Blueberry Biscuits are a delightful homemade treat bursting with juicy blueberries and topped with a sweet glaze.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 4 teaspoons baking powder
  • 1/3 cup sugar
  • 1 teaspoon salt
  • 5 tablespoons cold or frozen butter
  • 1 cup cold milk
  • 3 ounces blueberries, fresh or dried
  • 1 cup powdered sugar
  • 1/8 cup water
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon lemon juice

Instructions

  1. Start by preheating your oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. In a large mixing bowl, whisk together the flour, baking powder, sugar, and salt.
  3. Grate or cut the cold butter into small pieces and add it to the dry mixture. Rub the butter into the flour until it resembles coarse crumbs.
  4. Gently fold in the blueberries.
  5. Pour in the cold milk and mix until the dough comes together.
  6. Turn the dough onto a lightly floured surface and pat down to about 1-inch thickness. Cut out the biscuits.
  7. Bake for 12-15 minutes until golden brown. Let cool slightly.
  8. Whisk together powdered sugar, water, vanilla extract, and lemon juice for the glaze. Drizzle over the biscuits.

Notes

Ensure your butter is cold for the fluffiest biscuits. Store leftovers at room temperature for up to two days.
