Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper. In a large mixing bowl, combine the softened unsalted butter and granulated sugar. Using a hand mixer or stand mixer, cream the mixture until it becomes light and fluffy.
  2. Next, beat in the egg along with the vanilla extract until well blended.
  3. Gradually add the all-purpose flour and a pinch of salt to the mixing bowl. Mix on low speed until all the flour is absorbed and a smooth dough forms. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
  4. Roll out the chilled dough to about ¼-inch thickness. Use a cookie cutter to cut out shapes and place them onto the prepared baking sheet. Sprinkle additional sugar on top if desired. Bake for 10-12 minutes or until golden.
