Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper. In a large mixing bowl, combine the softened unsalted butter and granulated sugar. Using a hand mixer or stand mixer, cream the mixture until it becomes light and fluffy.
- Next, beat in the egg along with the vanilla extract until well blended.
- Gradually add the all-purpose flour and a pinch of salt to the mixing bowl. Mix on low speed until all the flour is absorbed and a smooth dough forms. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
- Roll out the chilled dough to about ¼-inch thickness. Use a cookie cutter to cut out shapes and place them onto the prepared baking sheet. Sprinkle additional sugar on top if desired. Bake for 10-12 minutes or until golden.
- Allow the cookies to cool on a wire rack before serving.
