  • ¼ cup milk (60 ml)
  • 1 cup cottage cheese (226 g)
  • 1 garlic clove, minced
  • 2 cups chopped spinach (60 g)
  • 4 large eggs
  • 1 Tbsp olive oil
  • 1 cup shredded cheddar cheese (56 g)
  • Salt and pepper, to taste

Instructions

  1. Start by preheating your oven to 350°F (175°C). This step ensures that the quiche will bake evenly. While the oven warms up, prepare your dish by lightly greasing a 9-inch pie dish with cooking spray or a thin layer of olive oil.
  2. In a skillet, warm the olive oil over medium heat. Once hot, add the sliced mushrooms and minced garlic. Sauté these ingredients together, stirring occasionally until the mushrooms release all their moisture and turn golden brown. This process usually takes about 5–7 minutes. Removing excess moisture will prevent your quiche from becoming soggy, ensuring a perfect texture.
  3. Once cooked, spread the chopped spinach evenly along the bottom of your greased pie dish. The spinach will add not only vibrant color but also a host of nutrients. Follow this by spooning the sautéed mushroom and garlic mixture over the spinach, creating a beautiful layer that will contribute to both flavor and texture in every bite.
  4. In a separate bowl, crack the 4 large eggs and whisk them together. Add the cottage cheese, milk, salt, and pepper into the mix. Seasoning at this stage is vital—tailor it to your preferences! Whisk everything until fully combined and the mixture is smooth. This amalgamation of eggs and cheese will create a fluffy, delicious binder for the veggies.
