  • 14 oz smoked Polish sausage, sliced into rounds
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • ½ teaspoon dried oregano
  • Salt and freshly ground black pepper, to taste
  • Fresh parsley, chopped (optional)

Instructions

  1. Start by thoroughly washing the Yukon gold potatoes. Once clean, dice them into ½-inch cubes to ensure even cooking. Thinly slice the yellow onion and the smoked Polish sausage. If you’d like to add a pop of color and freshness to your dish, chop up some parsley for garnish.
  2. In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the slices of Polish sausage to the pan in a single layer. Allow them to cook undisturbed for about 4-5 minutes until they brown nicely. Once browned, carefully remove the sausage and set it aside while you prepare the potatoes.
  3. Add the remaining tablespoon of olive oil to the skillet. Next, add the diced potatoes, ensuring they are spread out in an even layer. Cook them for about 10-12 minutes. Stir occasionally with a spatula to help them cook evenly and achieve that lovely crispy texture. They should be golden and tender when done.
  4. Once the potatoes are perfectly cooked, add your sliced onions along with garlic powder, paprika, dried oregano, salt, and freshly ground black pepper. Stir these ingredients together and cook for another 5-6 minutes for the onions to soften and caramelize.
  5. Return the browned sausage back to the skillet, stir all ingredients together, and allow them to cook for an additional 2-3 minutes. Garnish with chopped fresh parsley if desired, and serve hot!
