Description

Garlic Chicken with Broccoli and Spinach is a delightful combination of healthy ingredients that come together to create a dish that is not only quick to prepare but also bursting with flavor.

Ingredients

Scale
  • 2 cups chicken breast, cubed
  • 1 cup broccoli florets
  • 1 cup spinach leaves
  • 1/4 cup olive oil
  • 1/2 cup chicken broth
  • 1/4 cup grated Parmesan cheese
  • 1 tbsp garlic, minced
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Begin your cooking adventure by heating 1/4 cup of olive oil in a large skillet over medium heat. It’s important not to have the heat too high, as the oil should gently warm before you add the chicken.
  2. Once the oil is shimmering but not smoking, carefully add the cubed chicken breast to the skillet. Sear the chicken for about 5 to 7 minutes, turning it occasionally to ensure all sides are evenly browned and cooked through.
  3. When the chicken is perfectly golden, it’s time to add the star ingredient: minced garlic. Cook the garlic together with the chicken for about a minute, stirring frequently. This will infuse the chicken with a savory garlic aroma that is simply irresistible.
  4. Add the broccoli florets to the pan along with the chicken broth. Cover your skillet with a lid and allow it to simmer for about 5 minutes.
  5. Once the broccoli has softened, add the spinach leaves to the pan. Gently stir the mixture until the spinach wilts, which should take only 2 to 3 minutes.
  6. Just before serving, sprinkle the grated Parmesan cheese, along with the salt and black pepper. Give everything a good stir to ensure the cheese melts slightly and coats the chicken and veggies beautifully.
  7. Plate it up hot, ensuring each serving gets a generous amount of the vibrant mix of chicken and greens.
