- 4 medium russet potatoes, thinly sliced
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1 teaspoon smoked paprika
- 1 teaspoon Italian seasoning

- 1 cup shredded mozzarella cheese
- 1 cup grated Parmesan cheese
- 1 jalapeño, sliced (optional)

Instructions
- Start by preheating your oven to 200°C (400°F). This ensures your potatoes will bake evenly and achieve the desired crispy texture. While the oven heats up, prepare a large baking sheet by lining it with parchment paper. This will make the removal of your nachos easy and will prevent sticking.
- In a large bowl, toss the thinly sliced russet potatoes with olive oil, minced garlic, smoked paprika, Italian seasoning, salt, and black pepper. Make sure that all potato slices are well-coated with the seasoning mix. This step is crucial as it infuses the potatoes with flavor as they bake.
- Spread the seasoned potato slices out in a single layer on the prepared baking sheet. Bake them in the preheated oven for about 25 to 30 minutes. Be sure to flip the potato slices halfway through for an even crispiness. You want them to turn golden brown and become wonderfully crispy!
- Once they’re at the desired crispiness, remove the tray from the oven and evenly distribute the shredded mozzarella and grated Parmesan cheeses over the hot potato slices. If you’re a fan of a little heat, sprinkle sliced jalapeños on top as well.
- Return the tray to the oven and bake for another 5 to 7 minutes, or until the cheese is fully melted and bubbly. The aroma of garlic and cheese will fill your kitchen, tempting everyone around!
