- 2 large sweet potatoes, peeled and cut into 1-inch cubes
- 4 cloves garlic, minced
- ¼ cup grated Parmesan cheese
- 2 tablespoons olive oil
- 1 tablespoon dried Italian seasoning
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 tablespoon melted butter (optional)
- 2 tablespoons chopped fresh parsley (optional, for garnish)
Instructions
- Start by washing, peeling, and cubing the sweet potatoes into 1-inch pieces.
- Combine the minced garlic, grated Parmesan cheese, dried Italian seasoning, salt, and black pepper in a small bowl.
- Drizzle the olive oil over the sweet potatoes and sprinkle the seasoning mix over the top.
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper. Roast for 20-25 minutes.
- If desired, drizzle with melted butter before serving and garnish with fresh parsley.
