Ingredients

  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • 1 zucchini, sliced
  • 1 bell pepper, chopped
  • 1 cup cherry tomatoes, halved
  • 1/4 cup grated parmesan cheese
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Begin by heating a tablespoon of olive oil in a large skillet over medium heat.
  2. Once the oil is hot, add the shrimp and season them.
  3. Cook the shrimp for 2-3 minutes on each side until pink and cooked through.
  4. Remove the shrimp and set aside.
  5. Toss in zucchini, bell pepper, and cherry tomatoes into the skillet.
  6. Sauté the veggies for 4-5 minutes.
  7. Return the shrimp to the skillet and toss everything together.
  8. Sprinkle the parmesan cheese over the mixture and cook for an additional 1-2 minutes.
  9. Garnish with parsley and serve.

Notes

Ensure shrimp is fresh or fully thawed if using frozen shrimp. A non-stick skillet is recommended for ease.
