Ingredients

  • 1 flatbread (store-bought or homemade)
  • 1 cup cherry tomatoes, halved
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 cups fresh spinach
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Place halved cherry tomatoes on a baking sheet, drizzle with olive oil, and sprinkle with minced garlic, oregano, red pepper flakes, and salt and pepper. Toss to coat.
  3. Roast for 15 to 20 minutes until soft and slightly caramelized.
  4. Sauté spinach in a skillet over medium heat for 2 to 3 minutes until wilted, then set aside.
  5. Arrange flatbread on a clean baking sheet, sprinkle with mozzarella and parmesan cheese.
  6. Distribute roasted tomatoes and wilted spinach evenly over the cheese.
  7. Bake for an additional 5 to 7 minutes until cheese is bubbling and edges are golden.
  8. Cool slightly, slice, and serve.
