- 1 flatbread (store-bought or homemade)
- 1 cup cherry tomatoes, halved
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1/2 teaspoon dried oregano
- 1/4 teaspoon red pepper flakes (optional)
- 2 cups fresh spinach
- 1 cup shredded mozzarella cheese
- 1/2 cup grated parmesan cheese
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Place halved cherry tomatoes on a baking sheet, drizzle with olive oil, and sprinkle with minced garlic, oregano, red pepper flakes, and salt and pepper. Toss to coat.
- Roast for 15 to 20 minutes until soft and slightly caramelized.
- Sauté spinach in a skillet over medium heat for 2 to 3 minutes until wilted, then set aside.
- Arrange flatbread on a clean baking sheet, sprinkle with mozzarella and parmesan cheese.
- Distribute roasted tomatoes and wilted spinach evenly over the cheese.
- Bake for an additional 5 to 7 minutes until cheese is bubbling and edges are golden.
- Cool slightly, slice, and serve.
