- 2 cups broccoli florets
- 2 cups cauliflower florets
- 2 cups carrots, sliced
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 4 tbsp olive oil
- 4 cloves garlic, minced
- Salt & pepper, to taste
- 1 tsp dried oregano
- 1 tsp dried thyme
- ¼ cup fresh parsley, chopped (for garnish)
Instructions
- Begin by preheating your oven to 425°F (220°C).
- Clean and chop the vegetables into bite-sized pieces.
- In a large mixing bowl, combine all the vegetables with olive oil, minced garlic, salt, fresh ground pepper, dried oregano, and thyme. Toss thoroughly.
- Spread the seasoned vegetables in a single layer on a parchment-lined baking sheet. Roast for 25-30 minutes, stirring halfway through.
- Once the vegetables are tender and caramelized, remove them from the oven and garnish with parsley before serving.
Notes
Ensure an even roasting layer, and avoid overcrowding the baking sheet for the best results.
