- In a large skillet or grill pan, combine the butter and olive oil, heating them until the butter bubbles slightly. This indicates the pan is ready for searing. Carefully place the steaks into the pan. Cook them for approximately 4-5 minutes on each side to achieve a medium-rare finish. If you prefer them more done, continue cooking until your desired level of doneness is reached.
- Once the steaks caramelize beautifully, pour the cooking sherry into the skillet. Allow the sherry to blend with the natural juices for an additional 2-3 minutes, enhancing the overall flavor profile of the steak.
