  • Author: Alioui
  • Total Time: 45 minutes
  • Yield: 6 servings 1x

Description

There’s something undeniably comforting about a hearty bowl of Gnocchi Chicken Pot Pie. This savory dish beautifully combines tender gnocchi with succulent rotisserie chicken, all enveloped in a rich, creamy sauce.

Ingredients

Scale
  • 2 tablespoons unsalted butter
  • 2 cups sliced cremini mushrooms
  • 1 ½ cups diced yellow onion
  • 1 tablespoon fresh thyme leaves (optional plus additional for garnish)
  • 15 ounces thawed frozen peas and carrots
  • 2 teaspoons reduced salt chicken bouillon seasoning
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 3 cups shredded rotisserie chicken white meat
  • 2 cans cream of chicken with herbs soup (10.5 ounces each)
  • 1 cup chicken stock
  • 12 ounces potato gnocchi

Instructions

  1. Begin by melting the unsalted butter in your large sauté pan over medium heat. Once the butter has beautifully melted and started to bubble, introduce your sliced cremini mushrooms and diced yellow onions. Stir in the fresh thyme leaves, chicken bouillon seasoning, salt, and black pepper. Sauté everything for about 2 to 3 minutes until the onions become translucent and the mushrooms soften, imbibing the flavors of the spices surrounding them.
  2. Next, it’s time to bring hearty goodness into the mix. Add shredded rotisserie chicken along with thawed peas and carrots to the pan. This mixture creates a substantial base for your pot pie. Stir thoroughly until all ingredients are properly combined. Then, pour in the cream of chicken with herbs soup; it will create a creamy, comforting sauce that melds all the components together perfectly.
  3. Once everything is blended, slowly introduce the chicken stock to the mixture while stirring. This step is crucial to achieving a smooth and luxurious consistency. Bring the entire mixture to a gentle boil; this helps enhance the flavors while cooking. After the pot is boiling, gently fold in your potato gnocchi. Lower the heat to medium-low and allow it to simmer for approximately 10 to 15 minutes. Stir frequently to avoid any sticking, until the gnocchi becomes tender and cooked through. When ready, remove the pot from heat and if desired, garnish with additional fresh thyme leaves for an extra pop of flavor.
