- Roll out your thawed puff pastry on a lightly floured surface to ensure it doesn’t stick. Aim for an even thickness, but there’s no need to go overboard with rolling. Next, use a sharp round cutter to cut out 2-inch circles from the pastry. You should get around 24 circles—enough for a delightful appetizer spread.
- Using your thumb or the back of a spoon, gently press a small well into the center of each pastry circle. This will create the perfect pocket for your creamy goat cheese filling. Fill each well with about 1 tablespoon of soft goat cheese, making sure not to overfill them, as this can lead to messy baking.
