  • 1 tablespoon lemon juice
  • 3 garlic cloves, minced

  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • 2 tablespoons neutral oil
  • 2 tablespoons unsalted butter
  • 1 large onion, finely chopped
  • 400g crushed tomatoes or tomato purée
  • 150ml heavy cream
  • Fresh cilantro for garnish

Instructions

  1. Begin by mixing the Greek yogurt, lemon juice, garlic, ginger, garam masala, cumin, coriander, paprika, chili powder, and salt together in a large bowl. Once incorporated, add the chicken thighs and ensure they are all covered evenly. Allow the meat to marinate for at least an hour, or better yet, overnight, to absorb the rich flavors fully.
  2. Set your skillet over medium-high heat and add the neutral oil. Once heated, introduce the marinated chicken pieces into the skillet. Sear them until they develop a browned, slightly charred exterior, taking care not to cook them entirely through. Set the seared chicken aside on a plate.
  3. With the same skillet, reduce the heat to medium, add the butter, and let it melt. Then, toss in the finely chopped onions and sauté them until they reach a golden brown hue. This step helps build a deep, layered flavor base for the sauce.
  4. Incorporate any extra garlic and ginger, or other spices if desired, sautéing them briefly. Add the crushed tomatoes to the skillet, allowing the mixture to simmer for around 10–15 minutes until it thickens. Stir occasionally to prevent sticking.
  5. Pour in the heavy cream, stirring it into the tomato mix. Reintroduce the seared chicken to the pan and lower the heat to a gentle simmer. Allow the chicken to cook through and the sauce to develop a creamy consistency over 10–12 minutes.
  6. Once cooked, garnish the dish with freshly chopped cilantro, serving it hot over rice or accompanied by warm naan for the full effect of this classic dish.

Notes

Allow the chicken to marinate overnight for richer flavor. Use full-fat yogurt and cream for the best taste.
