Ingredients

- 2 cups all-purpose flour
- 1/2 cup water
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1 cup spinach, chopped
- 1/2 cup feta cheese, crumbled
- 1 small onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 1 tablespoon olive oil (for brushing)
- Fresh lemon wedges (for serving)
Instructions
- In a large mixing bowl, combine 2 cups of all-purpose flour, 1/2 cup of water, 1 tablespoon of olive oil, and 1/2 teaspoon of salt. Stir until they form a cohesive dough.
- Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth and elastic. Cover and let rest for 30 minutes.
- Heat 1 tablespoon of olive oil in a skillet, and sauté the finely chopped onion for 2-3 minutes. Add the spinach and cook until wilted. Mix in feta cheese and parsley, and let cool.
- Roll the rested dough into circles about 8 inches in diameter. Fill one half with the spinach and feta mixture and fold over, sealing the edges.
- Cook each Gozleme in a skillet over medium-high heat for 2-3 minutes on each side until golden brown.
Notes
For a gluten-free alternative, you can experiment with gluten-free flour, adjusting the water content as necessary.
