- 6 cups bread cubes or stuffing mix
- 2 large eggs, lightly beaten
- 2 stalks celery, chopped
- 1 ½ cups chicken or turkey broth
- 5 tbsp butter, divided
- 1 onion, chopped
- 2 tbsp chopped fresh parsley
- 1 tsp chopped fresh thyme
- 1 tsp chopped fresh sage
- ½ tsp poultry seasoning
- Salt and black pepper, to taste
- ½ lb sausage (Italian or breakfast)
- 1 ½ cups milk
- 2 tbsp butter
- 2 tbsp all-purpose flour
- ¼ tsp cayenne pepper

Instructions
- Begin by making the delicious sausage gravy: melt 2 tablespoons butter, add sausage, cook until browned, sprinkle in flour, gradually pour in milk. Chill for at least 2 hours.
- While gravy chills, sauté chopped onion and celery in 4 tablespoons butter until soft, stir in poultry seasoning, and add broth; simmer.
- In a bowl, mix stuffing ingredients with sautéed vegetables until combined.
- Grease muffin tin, fill halfway with stuffing, make a well, add gravy, top with stuffing, and brush with melted butter.
- Bake at 400°F for about 20 minutes until golden; cool before serving.
