- 1/4 cup whole wheat panko breadcrumbs
- 1/4 cup grated onion (white or yellow)
- 2 garlic cloves, minced
- 3 tbsp fresh parsley, chopped
- Zest of ½ lemon
- 1 tsp dried oregano
- ½ tsp ground coriander
- ½ tsp cumin
- Salt and pepper, generous pinch each
- 1 large egg
- 2 oz feta cheese, crumbled
- 1 cup Greek yogurt
- ½ cup cucumber, finely grated and squeezed dry
- 1 tbsp fresh dill, chopped
- 1 clove garlic, minced
- 1 tbsp lemon juice
- Salt and pepper, to taste
Instructions
- Preheat oven to 400°F (200°C). In a large bowl, combine the ground chicken, breadcrumbs, grated onion, minced garlic, parsley, lemon zest, oregano, coriander, cumin, salt, and pepper. Add egg and crumbled feta; stir until well incorporated.
- Form the mixture into meatballs, about 1 tablespoon each. Place on a baking sheet and bake for 12-15 minutes until cooked through and lightly golden.
- In a medium bowl, mix Greek yogurt, grated cucumber, dill, garlic, and lemon juice. Season with salt and pepper; whisk until smooth for the tzatziki sauce.
