  • 1/4 cup whole wheat panko breadcrumbs
  • 1/4 cup grated onion (white or yellow)
  • 2 garlic cloves, minced
  • 3 tbsp fresh parsley, chopped
  • Zest of ½ lemon
  • 1 tsp dried oregano
  • ½ tsp ground coriander
  • ½ tsp cumin
  • Salt and pepper, generous pinch each
  • 1 large egg
  • 2 oz feta cheese, crumbled
  • 1 cup Greek yogurt
  • ½ cup cucumber, finely grated and squeezed dry
  • 1 tbsp fresh dill, chopped
  • 1 clove garlic, minced
  • 1 tbsp lemon juice
  • Salt and pepper, to taste

Instructions

  1. Preheat oven to 400°F (200°C). In a large bowl, combine the ground chicken, breadcrumbs, grated onion, minced garlic, parsley, lemon zest, oregano, coriander, cumin, salt, and pepper. Add egg and crumbled feta; stir until well incorporated.
  2. Form the mixture into meatballs, about 1 tablespoon each. Place on a baking sheet and bake for 12-15 minutes until cooked through and lightly golden.
  3. In a medium bowl, mix Greek yogurt, grated cucumber, dill, garlic, and lemon juice. Season with salt and pepper; whisk until smooth for the tzatziki sauce.
