- 1 large cucumber, cut into thick rounds
- 6 oz firm block feta, cut into small cubes or rounds
- 1 cup cherry tomatoes, halved
- 1/2 cup pitted Kalamata olives
- Fresh dill or parsley, for garnish
- 2 tbsp olive oil
- 1 tsp lemon juice
- 1/2 tsp dried oregano
- Black pepper
- 2–3 tsp hot honey (or honey mixed with a pinch of chili flakes) for drizzling
Instructions
- Start by slicing the cucumber into thick rounds that are sturdy enough to hold the other ingredients without falling apart. Next, take the firm block of feta and cut it into small cubes or rounds, aiming for similar sizes as the cucumber slices to ensure even bites. Halve the cherry tomatoes and set them aside. You’ll also want to prepare the Kalamata olives by ensuring they are pitted and ready to go.
- Begin assembling your bites by taking a toothpick or small skewer. Start with a cucumber round, followed by a feta cube to create a foundation. Next, add a cherry tomato half for a pop of color and sweetness, and finish with a Kalamata olive on top. Continue this pattern until you have assembled all your bites. This step is not only fun but also allows you to get creative with your presentation!
- In a small bowl, whisk together the olive oil, lemon juice, dried oregano, and a sprinkle of black pepper. This will be your drizzling sauce that adds a zesty kick to your bites. Once mixed, set this aside until you are ready to drizzle it over your assembled bites.
