- 4 large bell peppers (red, yellow, or green)
- 1 cup cooked rice
- 1/2 cup crumbled feta cheese
- 1 small onion, finely chopped
- 2 garlic cloves, minced
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh dill
- 1 cup diced tomatoes
- 2 tablespoons olive oil
- Salt and black pepper, to taste
- 1 teaspoon dried oregano
- 1/2 cup vegetable broth or water
Instructions
- Preheat your oven to 375°F (190°C). Begin by cutting the tops off the bell peppers and gently removing the seeds and membranes inside.
- In a medium-sized skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic to the skillet, stirring them until they become soft.
- To the fragrant onion and garlic mixture, add the diced tomatoes, cooked rice, parsley, dill, oregano, salt, and black pepper. Stir everything thoroughly.
- Once the filling is prepared, gently mix in the crumbled feta cheese. Stuff each pepper generously with the filling.
- Cover the baking dish with aluminum foil and bake for 35 minutes. Remove the foil and continue baking for another 10-15 minutes until the peppers are tender.
Notes
Peppers can be prepared in advance and stored in the refrigerator before baking.
